Abstract:
This report presents the results of the research activities carried out by the OU of the Department of Agricultural, Forest and Food Sciences of the University of Torino over the February-October 2023 period.
Objectives.
a) To deepen the market analysis (AA.VV., 2023) of the studied PDO cheese and its non-PDO competitors (similars) in order to obtain a better understanding of the competitive context;
b) To obtain indications about the definition of characteristics/attributes (sensory and non sensory, that is, intrinsic and extrinsic) which influence the consumers’ choices and which are useful for conjoint analysis (Savelli E., Bravi L., 2020; Busacca B., Chizzioli C., 2013).
